MANUAL VS. THERMOSTATIC

If you’re cooking a variety of foods at different temperatures, manual controls allow you to regulate the amount of energy fed into each burner to fit the product on that portion of the griddle plate.

Thermostatic controls allow you to set a designated temperature and automatically recovers. This method is ideal for cooking large quantities of a single product, especially if it’s cooked from frozen.
